‘Twas The Night Before ‘Giving…

Thought I’d post a non-Thanksgiving meal on Thanksgiving.  I made this for the family last night;

Chicken Parmigiano with Roasted Garlic Linguini.

Yum…  HAPPY THANKSGIVING!!  ~Tom~

CHICKEN:  Preheat oven to 375 degrees.  Coat boneless skinless chicken thighs in a mixture of panko flakes, parmigiano cheese, salt and pepper.  Place in a lightly oiled baking dish, single layer.  Bake for 35-40 minutes.

LINGUINI: Bring a pot of water to full boil, drop in linguini and stir.  Bring back to a boil.  Meanwhile melt butter over medium heat (careful not to scorch).  Grate the zest of one clean lemon into the butter, then cut lemon and squeeze juice into the butter.  Using a small whisk add roasted garlic, salt and pepper.  Mix until all components are combined, then turn off the heat.

Drain the pasta, plate the food, drizzle the sauce; then pour the wine and enjoy!  ~TH~
